Who doesn't love Chinese Food?
One of my favorite Chinese Foods is Egg Drop Soup, and thanks to my talented Aunt Juli, I can make it myself - at home!
I thought this soup was difficult to make as most soup recipes I have tried definitely have a lot of steps, but not this recipe. It took me all of 15 minutes to make this delicious Egg Drop Soup that tastes just as good as the stuff in the restaurant.
Aunt Juli's Egg Drop Soup
4 cups chicken broth
4 eggs
1 chopped green onion
1/4 teaspoon salt
1/8 teaspoon ground ginger
1 1/2 teaspoons cornstarch
1 package egg drop soup mix
Mix 3/4 cup chicken broth in a separate bowl and dissolve cornstarch. Set aside.
Add remaining chicken broth, spices, onion and soup mix into a large saucepan and bring to a boil.
While the soup is cooking, whisk the eggs in a separate bowl. Drizzle egg a little at a time from the fork into the boiling soup. Egg should cook immediately. Once all eggs have been added, stir in broth and cornstarch mixture gradually.
Makes 4 servings
